Found, dates stored away on the refrigerator top shelf. The Last Course, by Claudia Fleming inspired this plate.
What a surprise to find these honey kissed little gems. Adding a spice infusion to top over coconut sorbet is just the what was needed for the last course.
24 dates, pitted and chopped, about 1/2 pound
1 cup dry sherry
1/4 cup honey
1/8 teaspoon cardamom
1 cinnamon stick
1 strip orange peel (1×3)
4 tablespoons unsalted butter, cut into 4 pieces
In a small saucepan, combine dates, sherry, honey, cardamom, cinnamon and orange peel over low heat. Simmer to almost syrupy. Whisk in butter bit by bit. Spoon on top of coconut sorbet. Add a biscotti.
