Matzo Brei with spring vegetables for a tasty Passover Meal.
Sticking to Meatless Monday for a traditional holiday like Passover may be the beginning I’m looking for. I’m used to a seder with fork tender brisket, chicken matzo ball soup, gefilte fish and an array of spring vegetables. With a wide choice of vegetables for the seder, maybe the matzo brie will replace the brisket? I’m not so sure, but there are options. Beets sprinkled with thyme on endive, asparagus grilled to a slight char, sweet potatoes and sauté kale for the mains. Rose flavored meringues with strawberries or a flourless chocolate cake. I would like to make all of these today, however I was just asked to bring the wine.
